Vegetables
The vegetable sector covers production of tomato, peppers, cucumber, squash, onion, broccoli, lettuce and other crops grown for domestic markets and for export. Work happens both in open field and under protected agriculture —shade house, macrotunnel and greenhouse— and much of the volume is harvested, graded and packed fresh to reach the consumer within days. Cycles are short and decisions are daily: what you settle this week on irrigation, nutrition and crop protection shows up in next week's harvest.

The sector hires agronomists and field technicians for crop management, irrigation and nutrition; plant health specialists in integrated pest management, since buyer residue limits force growers to document every application; and food safety and quality staff to hold certifications and pass audits. Protected agriculture adds climate control and hydroponics profiles, and the downstream end needs packing house managers, line supervisors and cold chain logistics coordinators. Most of these jobs mean early starts in the field, time with the crew, and stretches of the season with no fixed days off. It is also a sector that promotes from within: there are supervisors who started in harvest or on the packing line and grew into the job without a degree.
Where it is concentrated
In Mexico, export vegetable production is concentrated in Sinaloa, Sonora, Baja California, Baja California Sur, Jalisco, Guanajuato, San Luis Potosí and Querétaro, with protected agriculture expanding in the Bajío and the central states. Elsewhere in Latin America the leading areas are northern and central Peru, central Chile, and the vegetable districts of Argentina, Colombia, Guatemala and Honduras. Hiring peaks at transplant and harvest —in northwest Mexico, from fall through spring— and drops in summer, when many regions switch cycles or rest the ground.
