Temperate fruit includes apple, pear, peach, apricot, plum, cherry, pecan and walnut — crops that need winter chill to break dormancy and bloom evenly. These are perennial orchards on a tightly calendared program: dormant pruning, thinning, tying, and protection against frost and hail, with harvest compressed into a few weeks. Much of the crop goes through cold storage and controlled atmosphere so it can be sold out of season.

It hires agronomists with real judgment in pruning, thinning and bud management, because crop load is decided months before picking, and technicians who can read weather: chill hour accumulation, frost risk and the use of dormancy-breaking treatments. Harvest leads who can organize large crews within a very short window are in demand, along with packing and cold storage staff —plant managers, quality technicians, controlled atmosphere and refrigeration specialists— who keep the fruit sound for months. In pecan and table grape areas, irrigation and soil specialists matter as well, given water volumes and salinity. The seasons are sharply drawn: winters pruning outdoors in real cold, and harvests of long days.
Where it is concentrated
In Mexico these crops sit in high country with enough chill: Chihuahua — apple and pecan — along with Coahuila and Durango for apple and pecan, Sonora for pecan, and Puebla, Zacatecas, Aguascalientes and the State of Mexico for peach, plum and apple. In Latin America the center of gravity is Chile and Argentina — the Central Valley, the Alto Valle of Río Negro and Neuquén, and Mendoza — with production in Uruguay and southern Brazil as well. Seasonality is pronounced: harvest from summer into fall in the northern hemisphere and from year-end into the first months of the next in the south, with the rest of the calendar given to pruning, plant health and preparation.
