Modern pork production is among the most technified branches of animal agriculture: farms with separated stages — farrowing, nursery and finishing — selected genetics, phase-specific balanced feed and controlled environments. Output leaves as live hogs bound for slaughter and, increasingly, as carcasses or cuts processed in federally inspected plants, including for export. Biosecurity is not paperwork; it is the condition the business rests on, since a single disease entry can cost a farm its entire herd.

Companies hire production and herd health veterinarians, site managers, insemination technicians and farrowing staff, with particular value placed on people who handle piglets well and manage feed conversion. Around the barn there are roles in nutrition and feed milling, maintenance (ventilation, feed and water lines, manure handling and biodigesters), and biosecurity and production records, because the operation is run on daily data. Downstream, federally inspected plants employ inspection, quality and food safety staff, deboning and cutting crews, and animal health documentation specialists for export markets. The work regime is demanding: the farm never closes, so there are shifts, on-call duty and entry protocols — showering in, company-issued clothing and downtime away from other pigs — that limit what staff can do outside work.
Where it is concentrated
Mexico's pork hubs are Jalisco (with Los Altos at its center), Sonora — heavily export-oriented — Guanajuato, Puebla, Yucatán, Michoacán and Veracruz. In Latin America, southern Brazil (Santa Catarina, Rio Grande do Sul and Paraná), Chile and Antioquia in Colombia stand out. Production runs continuously year-round with no field season: the peaks are demand-driven — year-end and other high-consumption dates — and are planned months ahead because of the length of the animal's cycle.
