The poultry sector produces broiler meat and table eggs, plus turkey and breeder stock on a smaller scale. It is a tightly integrated chain: a single company often controls genetics, the hatchery, the farm, the feed mill, the processing plant and distribution. It runs on large flocks, thin margins per bird and strict animal health standards.

It hires veterinarians specialized in avian pathology and biosecurity, house managers, farm supervisors and hatchery leads, along with nutritionists and feed formulators for the mill. Processing plants add line supervisors, quality inspectors, food safety leads (HACCP and federally inspected TIF plants) and industrial maintenance crews, because a line stoppage is paid for in product. The operation also needs controlled environment technicians — ventilation, heating, humidity — and cold chain logistics coordinators. It is a sector of shifts, on-call duty and strict entry protocols: change of clothing, showering in, and downtime periods away from other birds.
Where it is concentrated
In Mexico, poultry concentrates in Jalisco, Guanajuato, Puebla, Veracruz, the Comarca Lagunera, Yucatán, Sinaloa and Nuevo León, with Jalisco the leading hub for both broilers and eggs. Elsewhere in the region, Brazil stands out with a strongly export-oriented industry, along with Peru, Colombia, Argentina and Chile. It is not a seasonal activity — houses produce year-round — but heat waves and avian influenza outbreaks bring work peaks and movement restrictions.
