Cattle
Cattle production covers two distinct chains built on the same species: beef — cow-calf, stocker, feedlot finishing and slaughter — and dairy, from the milking parlor to the processing plant. Tropical regions run mostly grazing systems with crossbred cattle, while the north and the Bajío lean toward feedlots and confined, ration-fed dairies. The output may be a weaned calf, a finished steer, a chilled carcass, or milk delivered every day of the year.

The core profile is the veterinarian, working in herd health, reproduction (pregnancy checking, fixed-time AI, embryo transfer) and herd management, alongside nutritionists who formulate rations and manage cost per kilo produced. Dairies hire parlor supervisors, milkers, milk quality and udder health leads, and calf-rearing staff; feedlots hire pen managers and pen riders, cattle receiving and adaptation crews, and feed truck operators. Downstream, federally inspected packing plants employ inspection and quality staff, deboning and cutting crews, plus cattle buyers and traceability and animal health campaign coordinators — essential wherever the operation exports. It should be said plainly: this is work with live animals, on pre-dawn schedules, with on-call duty and weekends, and many operations sit far from the nearest city.
Where it is concentrated
Cow-calf production and calf exports concentrate in the north — Chihuahua, Sonora, Coahuila, Durango and Tamaulipas — tropical cattle in Veracruz, Tabasco, Chiapas and the Yucatán peninsula, and dairy in the Comarca Lagunera, Los Altos de Jalisco, Chihuahua, Querétaro and Aguascalientes. In South America, the large grazing systems are in Brazil, Argentina, Uruguay, Paraguay and Colombia. A dairy has no season — cows are milked every day; what does follow a calendar is breeding, weaning and forage availability, which tightens during the tropical dry season.
